Japanese style Honesuki
The blade for this Japanese style Honesuki chef's knife is made from stainless carbon san mai. The core is 80Cr V2 high carbon tool steel with 431 stainless cheeks, with a blade length of 153mm, a blade width at the heel of 43mm, a blade thickness on the spine of 3mm and the overall length of the knife is 267mm. The handle scales are made from bronze wave Raffir with red liners and are held with two satinless Corbie bolts.
